Bison Bolognese

Bison Bolognese


  • 1 lb ground bison
  • 2 cups white onion, finely diced
  • 1 cup carrot, finely diced or grated
  • 2 garlic cloves, minced
  • 3 cups tomato sauce
  • 1/4 cup bison broth or water
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1/2 tsp cracked black pepper
  • 1/4 cup fresh basil, chopped or torn
  • 1 tbsp fresh oregano, chopped or torn


  1. Add olive oil to large pot
  2. Add ground bison to and cook thoroughly on medium heat
  3. Remove cooked bison and strain excess fat
  4. In pot, add a touch of olive oil and saute onions on medium heat
  5. Add salt, carrots and continue to saute
  6. Add garlic and stir in
  7. Add tomoto sauce, reduce heat to simmer
  8. Add fresh basil and oregano

Serve on top of cooked penne pasta (or your favorite!) topped with fresh herb and parmesan and drizzle of olive oil or avocado oil.
