Bison Bolognese
Ingedients:
- 1 lb ground bison
- 2 cups white onion, finely diced
- 1 cup carrot, finely diced or grated
- 2 garlic cloves, minced
- 3 cups tomato sauce
- 1/4 cup bison broth or water
- 2 tbsp olive oil
- 2 tsp salt
- 1/2 tsp cracked black pepper
- 1/4 cup fresh basil, chopped or torn
- 1 tbsp fresh oregano, chopped or torn
Directions:
- Add olive oil to large pot
- Add ground bison to and cook thoroughly on medium heat
- Remove cooked bison and strain excess fat
- In pot, add a touch of olive oil and saute onions on medium heat
- Add salt, carrots and continue to saute
- Add garlic and stir in
- Add tomoto sauce, reduce heat to simmer
- Add fresh basil and oregano
Serve on top of cooked penne pasta (or your favorite!) topped with fresh herb and parmesan and drizzle of olive oil or avocado oil.
