Gorganzola Meatballs

  • 1 lb Ground Bison
  • 1 egg 
  • ½ cup Panko flakes (or bread crumbs) 
  • 1 clove Garlic (finely chop) 
  • 1 tsp Worcestershire sauce 
  • ¼ cup Red Onion (very finely dice) 
  • 1 tbsp Smoked Paprika 
  • ½ tsp Black Pepper 
  • ½ tsp Salt
  • 5oz (150gr) Diced Gorgonzola Cheese

Mix all ingredients – form into 1” meat balls Place in a single layer on a cookie sheet and bake at 350F for 10-15 minutes until cooked through.

Serve immediately with toothpicks for spearing. If serving in a chaffing dish pour in a little white wine as a broth to keep moist.
