The Donair Shaved Middle Eastern Spiced Bison Gyros

Bison Danair

  • 1 lb.Ground Bison (80/20)
  • 2 TspDried Oregano
  • 3 tsp.Clubhouse Italian Spice
  • 2 tsp.Ground Black Pepper
  • 2 tsp.Garlic powder


  • Mix all spice into the Bison meat
  • Let sit 30 minutes in the fridge
  • Press out onto a loaf pan – 12 inches thick (meat loaf style)
  • Cook in oven at 350’f for 30 minutes, until internal temperature is 135’F
  • Remove from oven, remove from pan and cool completely
  • Refrigerate and next day slice on a meat slicer 3 mm thick (1/8 of an inch)
  • .


  • Preheat sauté pan or gill on high for 10 minutes
  • Spray steaks with vegetable oil or food release
  • Sauté until golden brown, do not stack sauté small portions at a time
  • Let rest 1 – 2 minutes and serve on naan

Sweet Garlic Sauce

  • 1 cupRoasted garlic
  • 1 canCondensed milk
  • 2 TBSP.Lemon Juice
  • 1 tsp.Kosher Salt


  • Puree garlic
  • Add all ingredients together
  • Refrigerate


Finely diced tomato (no seeds) / finely diced sweet Spanish onion / puffed rice


Warm naan bread in a pan (no oil) until toasted.Place the shredded iceberg lettuce on top then shaved bison, drizzle with the garlic sauce, tomatoes, onions and finish with puffed rice for the crunch
