The Donair Shaved Middle Eastern Spiced Bison Gyros
Bison Danair
- 1 lb.Ground Bison (80/20)
- 2 TspDried Oregano
- 3 tsp.Clubhouse Italian Spice
- 2 tsp.Ground Black Pepper
- 2 tsp.Garlic powder
Method:
- Mix all spice into the Bison meat
- Let sit 30 minutes in the fridge
- Press out onto a loaf pan – 12 inches thick (meat loaf style)
- Cook in oven at 350’f for 30 minutes, until internal temperature is 135’F
- Remove from oven, remove from pan and cool completely
- Refrigerate and next day slice on a meat slicer 3 mm thick (1/8 of an inch)

Cooking:
- Preheat sauté pan or gill on high for 10 minutes
- Spray steaks with vegetable oil or food release
- Sauté until golden brown, do not stack sauté small portions at a time
- Let rest 1 – 2 minutes and serve on naan
Sweet Garlic Sauce
- 1 cupRoasted garlic
- 1 canCondensed milk
- 2 TBSP.Lemon Juice
- 1 tsp.Kosher Salt
Method:
- Puree garlic
- Add all ingredients together
- Refrigerate
Garnish
Finely diced tomato (no seeds) / finely diced sweet Spanish onion / puffed rice
Assembly:
Warm naan bread in a pan (no oil) until toasted.Place the shredded iceberg lettuce on top then shaved bison, drizzle with the garlic sauce, tomatoes, onions and finish with puffed rice for the crunch
