Tajine Qamama

Ingredients

  • 4 lbs - Bison Sirloin Steak cut into serving pieces
  • 6 med onions, finely chopped
  • 8 garlic cloves, crushed
  • 6 TBSP olive oil
  • 1 TBSP grated fresh ginger
  • 2 1/2 TSPS salt
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp cinnimon
  • 1 tsp ground coriander seeds
  • 1/8 tsp powdered saffron
  • 5 cups water
  • 1 cup raisins
  • 1/2 cup - chopped dried apricots
  • 1/2 cup silvered almonds ( optional)

Directions

  1. Place bison steak, onions, garlic, olive oil, ginger, salt pepper, cinnamon, coriander, saffron and water in a sauce pan. The stir and bring to a boil. Sommer over low heat for 2 hours, adding more water if necessary, then remove meat with slotted spoon and place in a casserole. Set aside.
  2. Add raisins and appricots to the sauce in saucepan, Cook over medium heat until sauce somewhat thickens. Pour over meat, then cover and bake in 300 degrees F (150 degress c) preheated oven for 2 hours or until meat is very tender.
  3. Servce hote with cooked rice or couscous.
  4. Garnish with slivered almonds, if desired
