Tajine Qamama
Ingredients
- 4 lbs - Bison Sirloin Steak cut into serving pieces
- 6 med onions, finely chopped
- 8 garlic cloves, crushed
- 6 TBSP olive oil
- 1 TBSP grated fresh ginger
- 2 1/2 TSPS salt
- 1 tsp salt
- 1 tsp pepper
- 1 tsp cinnimon
- 1 tsp ground coriander seeds
- 1/8 tsp powdered saffron
- 5 cups water
- 1 cup raisins
- 1/2 cup - chopped dried apricots
- 1/2 cup silvered almonds ( optional)
Directions
- Place bison steak, onions, garlic, olive oil, ginger, salt pepper, cinnamon, coriander, saffron and water in a sauce pan. The stir and bring to a boil. Sommer over low heat for 2 hours, adding more water if necessary, then remove meat with slotted spoon and place in a casserole. Set aside.
- Add raisins and appricots to the sauce in saucepan, Cook over medium heat until sauce somewhat thickens. Pour over meat, then cover and bake in 300 degrees F (150 degress c) preheated oven for 2 hours or until meat is very tender.
- Servce hote with cooked rice or couscous.
- Garnish with slivered almonds, if desired
