Lynn's Amazing Bison Roast
INGREDIENTS:
- 4 lbs Bison roast
- 1 small onion -- quartered
- 3 stalks celery -- chopped
- 2 carrots -- chopped
- 2 parsnips
- 1 cup red wine
- 1 cup diced canned tomatoes -- not drained
- 2 large garlic cloves -- crushed
- 1 tsp chopped fresh rosemary
- 1 tsp dried thyme
- (or 2 tsp Herbs de Provence)
- 1 TBSP Worcestershire sauce
- 1 TBSP BBQ sauce
METHOD:
- Sprinkle roast with Montreal Steak spice or equivalent.( I blend the Montreal steak spice with Hys steak spice and grind it finely)
- Sear Roast in 425 degree oven 15 minutes. The onions can be in the roast pan when you do this but not any liquid.
- Meanwhile, combine wine, tomatoes, Worcestershire sauce, BBQ sauce, crushed garlic and herbs.
- When Roast has seared add carrots, celery, parsnips, and tomato mixture.
- Roast in oven 300 degrees for 1 1/2 to 2 hours for small roasts 3 hrs for a larger roast
- Let rest before serving.
- Strain juice from roast and use to make gravy.
