Maple Glazed Bison Skewers

1 lb bison sirloin cut into 1 inch cubes
Soak wood skewers in cold water for at least 30 minutes
Bison Marinate:
- 1 tbsp soy sauce
- 1/4 cup olive oil
- Pinch dried chilies
- 1/2 tsp minced garlic
- 1/4 tsp nutmeg
Bison Brush Syrup:
- 1/2 cup maple syrup
- Pinch dried chilies
- 1/2 tsp coarse salt
- Pepper
Method
- Make Bison Marinate by whisking ingredients together
- Marinate at least 1 hour; no longer than 8 hours (meat may get tough)
- Skewer the marinated bison onto 4 skewers
- Mix ingredients for Bison Brush Syrup
- Grill Skewers on BBQ, brushing Bison Syrup as you turn the skewers
- Cook until desired doneness
