Bison Chili

First Place winner in the Soups/Stews Category of the 2011 Recipe Roundup.

Ingredients:

  • 2 lbs ground bison meat, browned
  • Sauté: 1 large onion
  • 1 green pepper
  • 1 red pepper
  • ½ pkg diced celery
  • 2 cups fresh mushrooms, chopped
  • 1 large can of diced tomatoes
  • 2 - 14 oz cans pork & beans
  • 14 oz can kidney beans
  • 1 large can spaghetti sauce
  • 1 cup ketchup
  • 1 – 14 oz can kernel corn
  • 1 – 10 oz can tomato soup
  • 3 tbsp chili powder, or to taste
  • 1 tsp salt
  • 1 tsp pepper

Instructions:
Mix all the above and place in slow cooker for 2-3 hours. Top with shredded cheddar to serve.
